
Why a cellar needs its own system
Wine is sensitive to swings in temperature and to dry air. A standard split system is built to cool people, not bottles: it drops the temperature quickly, dries the room out and switches off, which is exactly the cycle a cellar should avoid.
A cellar system is sized and controlled to hold a narrow band, typically around 12 to 14 degrees, while keeping humidity in a range that protects corks and labels.
